The average and lap pace are the ones that are supposed to be lagging.

I assume that there is a glitch in your graph of F6. The current pace drops to 15:00min/km and the average pace increases to 00:00min/km (speed of light?).

It shows your current pace and an upper/lower limit so you’re in the target range. It does have colors. Green in the middle. Red on the outsides. You cannot edit that page.
Same experience with Walk activity. The current pace and distance are almost always accurate when Walk, but on the same trail route with Run activity the distance is shorter and the pace is ridiculous...
AFAIK the HRM-Pro (and any other garmin runninng dynamics sensor) calculates stride length by receiving current pace data from the watch. Therefore it won't work when the strap works disconnected from the watch.
As somebody who regularly runs since 1978, I can assure you that running intervals is possible without a GPS-watch and even without a watch!
For intervals the average lap pace is much more helpful than the current pace.
