I can't find it under add activity on the watch.

"Start" button -> Add -> scroll and you will find it. In my watch it's just after Padel.
If you've copied activities? , you won't get any new sports profiles in software updates...
Garmin has got rid of the function "copy activitiy" by adding to many sports profiles we can't delete.
I just tested what you said about the ‘copy activity’.
I’m still able to add sports profiles (horse riding as asked by originator) and I’ve got copied activities as well
Horseback was activity number 58 as far as i remember. So 2 custom activities should currently still be possible, then the limit of 60 is reached. If 60 sports profiles (e.g. the 57 preinstalled and 3 copied) are already present on the watch and a new firmware is installed, new sports profiles contained in that firmware will not be available.
I assume a factory reset will install the new sports profile, because it will wipe the copies first.
I could add horseback now, even though I already had more than 3 custom (non Garmin) activities. Although altogether the number of installed activities is below 40.

Can you please clarify that this limit only applies to those installed on my 6X. I only have about 25 installed.
Unfortunately yes, all profiles count against the limit. You can try to copy any activity to confirm that this is indeed the issue for you. If copying fails, you have reached the limit. Garmin does not state it in their manuals. Users discovered it and Garmin then confirmed it in the form. Here is the thread about it: forums.garmin.com/.../are-only-3-custom-activities-possible
flocsy🤠: with non-Garmin profiles, do you mean activity apps from CIQ store? Because these do not count against the limit. If you indeed mean copied Garmin activity profiles, then I am quite surprised that this works for you.
Well I don't remember exactly which one comes from where, but here are the ones that I think are not built-in:
Inline Skate (copied from XC Skate Ski)
Toe-toToe Challenges (Not sure where this comes from CIQ or if it is one of the built-in 60)
jumprope (CIQ store)
SmartWake PRO( CIQ store)
Smart SleepTracker & Alarm (CIQ store)
Dance+ (CIQ store)
Test HRV (CIQ store)
So it looks that you're right CIQ doesn't count, so I only have 1 copied.
