YES PLEASE!!! I currently use the XC ski profile but, as you said, there are many differences. Snowshoeing is significantly more difficult, especially when you factor in that you can do a lot of climbing with snowshoes. Also, snowshoers typically move more slowly than XC skiers. PLEASE ADD SNOWSHOEING!!!
So it looks like Garmin Connect does support snowshoeing, meaning you can change the activity type after the fact:
If you want to have a snowshoeing activity profile on your watch, you can try making a copy of XC ski (or whatever the closest activity is), and following these instructions to mod it or you could try the file I attached below:

I went ahead and modded my 935 XC Ski profile to create a Snowshoeing profile.
It's exactly the same as XC Ski except:
- In Garmin Connect it should show up as "Snowshoeing"
- The activity name on the watch will be "Snowshoeing" (this can be edited)
I can't guarantee it'll work on any other device than 935. If you have a different device, you can try the instructions in the link above.
Note that there seems to be a hard limit of 40 activities (built-in and custom) on 935 at least, so this may not work if you're at that limit. I currently have an issue on my watch where I'm at the limit and cannot delete any custom profiles, so I am unable to test this. (Although I was able to create a custom "Road Cycling" activity in the same way.)
NOTE: Use this at your own risk. I can't guarantee that it'll work, or that it won't create an undeleteable activity profile on your watch (which counts against the profile limit.)
Personally I have had problems with undeleteable activities (and other weirdness) on my 935 since day 1, so it may be that those problems have nothing to do with this kind of hack.
Installation Instructions
1) If using Mac and music-enabled watch, install Android File Transfer
2) Unzip the following file to obtain 99SNOWS.FIT: 99SNOWS.zip
3) Connect watch to PC with USB
4) Copy 99SNOWS.FIT to \GARMIN\NEWFILES
5) Eject watch
A somewhat safer / more reliable way of doing this might be to use the Any Activity Connect IQ app, which supports snowshoeing (and many other activities):

The downsides are:
- It doesn't support all devices
- It completely replaces a native activity (as a full device app), so you lose a lot of native features.
