I know the complete thread as well as your answers and you state that you don't even have a watch right now, so I'm wondering why that bothers you then. Also Garmin is already investigating the problem and doesn't need any further data - you could of read this too.
Yes, I just noticed the same FTP measurement even though I’ve never cross country skied.

3. It's several gigabytes so that won't be possible. Are there specific files you'd like?
4. Google Pixel 5 running a current version of Android. (so this isn't limited to iOS and seems tied to the whole platform)
My current Garmin devices include a Fenix 7X Solar, Edge 1040 Solar, Rally XC200 pedals, HRM Pro+.
POSSIBLY coincidental or not: I only noticed XC Ski FTP after doing an outdoor bicycle ride yesterday with a power meter, logged using the Edge 1040 Solar.
EDIT - further datapoints:
Garmin Connect on the Web FTP page indicates XC Ski FTP "since Nov 5th" which correlates to the outdoor ride yesterday. It also indicates "Based on Cross Country Skiing FTP 121 W May 27". (note: the only activity on May 27th was a walk) Further, it has a note the bottom: "Cross country skiing FTP is typically 30 to 40 percent lower than cycling FTP at the same training intensity.
It could be useful if other users noticing this posted details from Garmin Connect Web - what dates is it mentioning and what activities have you logged? Any bike rides with power?
Garmin relatively recently added Cross Country Ski Dynamics with compatible devices. It almost seems like they "cross-wired" something in the software and now it's popping off XC Ski FTP even if you've never done it. https://support.garmin.com/en-US/?faq=oHbDqNJFHN2Uqyj6NS99l5
I note that I'm using both of the needed XC Compatible devices. (HRM-Pro+, Fenix 7 series)
