I’ve not been impressed, there’s like 2 new ones with limited customisation options. I’d like my steps, weather, baro, sun event, date, all fairly easy to do on the likes of Instinct 2 or F7 can’t be done on 255

You need to look at more watch faces in the CIQ app store. There are some that look really good on the 255. have little impact on battery life, and that can be customized on the watch itself without using…
... don't scale that well to the resolution of the 255, are laggy, eat up your battery life ...
I have not experienced this.

True…
I've tried some of the faces mentioned and most of them are laggy and also look terrible from both a design and a readability perspective. You can't even exit the widget glances without dropping loads…
Why does it have to be stock? I was hitting the Connect IQ Store about 5 minutes after turning on the watch, looking for a suitable watch face. Luckily, there are plenty of them.
The ones on the CIQ store don't look that great and don't scale that well to the resolution of the 255, are laggy, eat up your battery life and can't be customised from the watch.
I agree with the OP that the stock ones suck though, there's so little room for customisation - please give us more options Garmin

True, but I think they are much more customizable from the app (phone) than the factory ones from the watch. For me, it's not just fine, I like it better.
Yes, there are some real gems that look very good on the 255 namely:
MARQ Athlete/Aviator/Captain Gen 2 MB
Polaris Stealth (made by Garmin)
Used Look/Metal Look/Numberfully Big Numbers Gen 2
Luminal
Morphius
Army (made by Garmin)
Analog Switch
Infocal V2/Di2
Plus they do have settings which allows you to switch off seconds and set the display to only update once every minute, which often results in better battery life than stock faces.
I use
ActiFace

and
Enduro Like Plus

I like both :)
yes, i agree. most non Garmin and mostly all analogue watchfaces are absolutely ugly on the bad resolution of the 255. This is different with the Venu or 265, but on MIP screens these are simply no alternative and look very much bad 90ies
