Is there a reason why Garmin can't enable the option of GPS + Glonass + Galileo all at once? Yeah it might hamper battery life, but surely if the software can allow GPS + Glonass OR GPS + Galileo, why can't it offer all 3 at once?

and it would be relatively easy to implement.
Unless the GPS chip has a limitation that would prevent it.
Doubt the Fenix 6 has the correct GPS chip as it has changed in the Fenix 7
Multiband means using additional frequency for a satellite navigation system. For GPS it's L5 frequency. Fenix 6 most likely does not have hardware for that.
If you mean using multiple systems at once…
I've wondered the same thing, and it would be relatively easy to implement.
However, it would still not be a multiband.
Multiband means to be able to receive several frequencies of a GNSS.

If you mean using multiple systems at once, I don't think that it is easy to implement in a way that it brings some benefits in every scenario. "More system, more accuracy" does not necessary hold.
