Is it possible to stop the watch recording distance, pace, ... etc when trail running?
I only want to track time on feet and heart rate/intensity zones.

Turn off GPS in the Trail Run Activity settings or try the Indoor Run Activity.
Thanks for the quick response! Is there any possibility I can still use maps for navigation when doing this?

No.
If you want to ignore distance and pace, you can adjust the displayed fields to show only what you're interested in, but if you want to know where you are, you need GPS on. Even if you have GPS off, the watch will estimate your distance travelled using the built in gyro & accelerometer.

Yes, i just tried it out... Is there really no way to stop the watch tracking my distance completely? Maybe by creating a custom activity that only focuses on time and heart rate?
maybe you could use cardio activity, but then again no navigation
svetljo is right, you can use something based on cardio, but you also want to show your position on a map and by the sound of it perhaps use a course for navigation. These are fundamentally contradictory.
You've bought a device which will do its best to track your distance when you're running even if you're in a tunnel with no GPS signal at all. I don't think your use case was really very high on their priority list tbh!
I think the best would be to configure the watch to not show distance data on the training pages while running and stop the Auto Lap feature in the sportapp setting. This way you would not see your distance, but would see your position on the map and even could navigate.
The watch would record distance and also would upload to garmin connect, but it would not bother you while running
You can adjust which datafields are displayed. Removing distance and pace from the fields you choose to display seems to be the obvious solution to your question.
Also there is the new Adventure Racing activity, but this will disable navigation. https://www.dcrainmaker.com/2021/08/garmin-adds-new-adventure-race-activity-profile-an-explainer.html
