There are websites that show you the position of the various satellites. I don't know if it's the best but the only one I have tried is in-the-sky.org and on that you can filter glonass and galiileo and see which has the most satellites in the sky above you and pick that. Right now it suggests that galileo might be your best bet but I guess you should check what's closest when you start a tracked activity.
It depends on the time when running! If you are a android user, install an app called GNSS View and look at the satellite positions. Then configure your watch. It works rather good.
