I don't think you'll find that solar charging will increase battery %.
Off all additional functions. May be this step help to save energy.

I read somewhere that when charging with solar energy, the battery is not charged directly. Instead, the battery is relieved by the solar energy being used directly by the watch, so that little or no energy is needed directly from the battery during solar charging. This extends the watch's operating time between charging cycles.
The watch contains a LI-ion battery that is sensitive to continuous charging, overcharging or complete discharging. For the life of the battery, it is best to charge it only with a flat charge curve, i.e. 30%-80%.
So it is not surprising that the battery symbol does not show increasing capacity during solar charging.

You should get charge increase. It is at least what I get with my Tactix Delta Solar. You can find many YT videos with real-world tests showing that battery charge increases. One example (8% charge increase after 6 hours for Fenix 6S Pro Solar with default watch settings and +9 days for Instinct Solar): https://youtu.be/-F7oaGfG9-4?t=105
If you want to verify I suggest to install some battery widget which shows more precise battery reading (with decimals). I recommend the widget by dsapptech. I can see battery charge increase even if i'm driving my car in sunny day.
One more thing. Keep in mind there is an overheat safety. If you put your watch at direct sun the charge might stop after reaching some temperature (depends on your ambient temp as well). I suggest you disable all wireless connectivity (airplane mode) and check the charge in your car with A/C enabled on some sunny day. You will definitely see the battery charge increasing slowly.
