I've just bought a Fenix 6 pro and wondered if it is possible to work with smart scales for tracking weight... Specifically we have a set of Honor 2 Smart Scales....

No, you can sync automatically only Garmin scales. You can track your weight by manually adding it to Garmin Connect.
If you have an Android phone there's an app called Weight Logger where you can manually import the data into it and then push it to GC. Currently there's log in problems with the app but it can generate a FIT file for you to manually import (I have the same scale!)
I have written a python program to do the same on my mac as well. Basically, be wary of Huawei/Honor as there stuff is pretty much walled garden. But with a little effort it can be done
Here's the sort of things you can transfer over:
Weight / Body Fat / Skeletal muscle mass / Bone mass / %age fat / % water
Thanks, I might take the plunge and buy a Garmin Index S2 smart scale, its £150 here in the UK but in the long term it makes life a lot easier...
Garmin Connect can import weights from myfitnesspal and here are the scales that work with MFP (Honor 2 not included):
Withings scale -> MFP -> GC works well for me
