Yes I know, but I would like to be able to use the STR3AMUP! software with my Fenix 6. And that's currently only possible with the Instinct Esports watch. It shouldn't be that difficult to bring that functionality…

It's basically the same idea as the "virtual run" or "broadcast HR" functions that the Fenix already has. You install a program on your PC that receives the broadcasted HR (and stress) from the watch, and superimposes it onto your livestream video.
I suspect the Fenix hasn't gotten this specific eSports feature because people who buy the Fenix would rather go outside than play video games all day. No market for it. You can see from the Instinct eSports Edition forum exactly how much market there is for it. There's a fair chance that OP is the only Fenix owner requesting this.
I think literally the only people using such a feature are the people who were sent the Instinct eSports Edition watch to review.
I see it shares your stress level and HR with others. Is that it? It says there's a dedicated profile, but is it just to record heart rate and then listing the activity as eSport? I'm curious to know what the benefit would be to track this activity?
