Maybe it's also a regional thing? I'm in USA, using Connect for Android, and just checked the version and it's definitely the most current version. There is no "Fitness age" under health stats on my app…
This already exists on Connect. I believe it's been there since before Fenix 6 even came out.
Just go into VO2 max page in Connect and it will show you your fitness age. Venu 2 just has a slightly different algorithm for it.

Get me my Venus age ! Get me the 745 face ! Get me wrist running power or native power on wrist or HRM tri...why should you do this Garmin....because I want it...nuff said!

The new fitness age algorithm of Venu 2 is available on Fenix 6 too. It's a new page in health stats on Garmin Connect mobile.

Maybe it's currently in rollout. Have you the latest Garmin Connect version ?
Maybe a sync is required on the latest version of GCM. I'm using the Android version and I just looked and it's on mine too. Stats are in the same order as piotridsikowski posted with Fitness Age the last listed.

Could be some sort of paced rollout, like they do with firmware.
