The Sapphire version includes the Pro features. I own a 6 Sapphire and includes maps, for example. I'm looking at the box it came in and I don't see the word Pro either.
I don't think the sapphires say pro anywhere, just "sapphire." Same with the engraving on the back of the watch, and in Garmin Connect, should just say fenix 6x sapphire. Some integrations like strava may list it as "Fenix 6x."
Totally normal to retire multiple software updates out of the box, that's just the world we live in, it should update you to 15.20 and have a bunch of map updates.
I was confused as to whether the sapphires were pro models too, because Garmin has so dang many variants. But yes, if your watch says sapphire on it, it is a pro model (with onboard maps and music supported).

Thanks for putting my mind at rest. I have now noticed in some other videos the ward pro is mentioned when it isn’t a sapphire !
Will say on the back of the box too what features it has... i.e. Topo maps

They really should start calling the sapphire watches "Pro Sapphire", it would end a lot of confusion, plus it just sounds better, so it's a win-win for them.

I literally cancelled my order a couple of times as I was unsure if the watch I put in cart was a plain "Sapphire" or Pro "Sapphire." I eventually had to parse through the product description to confirm all Sapphires come with topo and music before pulling the trigger.
