You can copy every app on your watch and re-name it. But this doesn’t do what you want: in Garmin Connect every activity is shown with its original name, not the name you gave to it. I. e. road cycling…

The easiest way to track the mileage of your equipment is to ad it manually to every activity. If you do so, you can filter in GE for the used bike and see every ride and total mileage.
To add some more info - you can add your bikes(and shoes, chains, tires) in the Gear section of GC.
You can set some of them as default for cycling - e,g. the bike you most commonly use. And, when you use the 2nd bike you can manually change the gear for that particular activity.
For example - i have my gravel/road bike as default during the season. The MTB is not so much used, so i manually add it when it's the case. And now, because the winter is coming and I'm only using the old bike on the home trainer - I've set this as default for coming months.
