Is there a reason or a setting on the Fenix 6 as it only measures V02 max once per week and that day happens to be when I run on a treadmill ?
On days I run outside and use the run setting it doesn’t measure V02.

Strange, I find my watch measures VO2 after every run (I assume there has to be a minimum time but all my runs are no less than 30 mins).
Dont you get a stat breakdown after your runs that includes VO2, Recovery etc?
Are you looking at the web report or the mobile app? On the web the 4 week view just shows one value per week. On the mobile app I can see a value for each and every day of the 28 days, where I trained. This is for cycling, for me, as I don't run often.
I was looking in the app, but I just checked the watch it shows the last one only which was last Thursday

This isn't true, or at best a bit misleading.
According to the manual you need to "run outdoors for a minimum of 10 minutes" to get a VO2max reading. Nothing specifically about running in zone 2, and from my experience you're not less likely to get an estimate if you run entirely in zone 3,4 or even 5.
Here is my four week report from the app. For cycling I have a data point for every day that I cycled, including days with no change. When I did not cycle, like on the 28th, the absence of data is correct.
I did run on the treadmill on the 28th, but it has not generated a value for VO2max. I assume this is because it was run/walk intervals and there was insufficient coherent data from which to generate a sensible number.

You do have to spend several minutes in AT LEAST zone 2. Zone 1 running won't give you a VO2Max. Zones 3, 4 and 5 are all good too. Firstbeat aren't precise about the calculations, but this may be based on a % of maxHR, rather than how the user defines them in GC.
If you dont believe me, try 15 minutes of VERY EASY running, and then see how quickly you get a Performance Condition notification when you lift it to zone 2.
Cycling in Z2 yesterday I was on the bike for over an hour before I got a Performance Condition notification. So it certainly needs to see a bit of effort on the heart rate response before it can deduce anything about performance.
