If you switch on Log HRV in the settings, and open a free Runalyze account, you can see HRV data for your activities there.
Plus if you download the FIT's, there's a free app (Kubios HRV Standard) which will analyse it too
Don't you think that a plot of the stress variable would closely resemble a plot of the HRV variable?
Stress score is derived from HRV and other metrics but it is more effective to see HRV evolution alone.
Seems to me like a HRV chart would look exactly like the inverse of the stress chart. Seems redundant to me.

Did you write the one that's on the CIQ score? If not, what's your opinion of it as my wife uses it reasonably regularly

To be honest, for me anyway I tend to look at the anomalies reading to see if my HR strap needs washing (it goes up quite a bit if it's needing a wash)
Even with the reduced sampling, is it worth looking at (If I can get an expert opinion for free, I will - no shame here lol)

It is true that the watch only records once every second but it records all the HRV timestamps over that second. You can easily check this by exporting the FIT to a CSV file. There is an export tool in the FIT SDK.
