Thought I had seen we should be on v 3.0 but mine is still on 2.3.
Is there a way to force the update? Saw syncing status in my app that it was "sending the update" but it hung there and eventually just stopped.

Download Garmin Express on a PC or Mac and use it to update. The firmware transferring will be much faster via express and it won't eat your battery.
Do you know if the software can be updated via the onboard wifi, directly on the watch ?
It was possible one the Fenix 5 so it should still work.
You do a normal sync then check the software version info, if there is an update there will be an option to install it.
