Hi! I would be interested also in resources/courses about how configure development environment (I'm struggling to deploy an app with my macbook, now I'm trying to switch to a windows machine 
Not really. There are some pretty old videos on youtube, and lots of apps on github: github.com/.../awesome-garmin
You can see a bunch of simple samples if with the VSC command pallet you use Monkey C: Open Samples Folder. or use the SDK templates for different app types using Monkey C: New Project
