I want to develop my own app for recording activities. Is it possible to show existing data fields in a watch app? I would also define the data field layout. As in the simulator in menu Data Fields - Layout - 4 Fields B.

No, either you create an app, where you can record a session and you have to do all the visuals by yourself, or you can create a datafield, and you can add it to a layout of an activity (but not to an app)
This is why we see very few device apps for the popular activities like running, cycling and swimming. The developer has to reinvent the wheel for all of the UI and any of the non-core functionality that they want to include in their app. If the user wants or needs to use a specialized CIQ data field during their activity, then using a CIQ device app is out of the question. (Unless the device app comes from the same vendor and re-implements the functionality of the data field.
On the user's end, they get what could be considered a degraded user experience, lacking much of the functionality of a native activity, with a different look and feel.
Ofc CIQ data fields have their own problems, like their inability to accept user input.
I think this is exactly my problem. I just want to record wingfoil activities. But Garmin does not know wingfoiling. I could record it as windsurfing. But I also cannot find windsurfing in the activities. I have to choose "other" and change it to windsurfing after recording. Because of this hassle I try to write my own app.
I know it's not exactly what you're looking for but you could create a custom activity named "Wingfoiling", based off of the closest available activity type or something generic like Cardio or Other. Then you could change your settings in the Connect website:
User profile (upper right hand corner) > Display Preferences > Activity Name: Location and Device Activity Name
At least it would give you a way to distinguish these activities in Connect.
