With MapTrackView, the firware draws the track using GPS data.

Just for confirmation, I am interested in in seeing if there is a way to essentially replace the internal Garmin GPS data with external GPS data and use that data with MapTrackView rather than the internal Garmin GPS data. I was thinking maybe if MapTrackView or potentially the Garmin system may have some setting that would allow external inputs. Are you aware if this is possible or is MapTrackView and the Garmin locations only capable of using internal GPS?

No, you can't replace the watches own GPS data with your own when recording ab activity. But you can display whatever you want in MapView/MapTrackView.

I was wondering if there would have been some way to input custom live data of some sort into the mapTrackView function. I see that this may not be possible now.

I posted a link to one of my apps where the user can input a lat/lon with a picker and I draw a map with that location centered. What you can't do is override the lat/lon that's being recorded in an activity. You also can't override things like distance.
You can use fitContrlb to add your own data and that will be shown in Garmin Connect, but the Firmware data is the data used for overall display.
