Get phone information

Is it possible to retrieve information from the connected phone, such as weather information en contents of message to be used in e.g. a watchface?

The quick answer is no. The more accurate answer no unless the data on the phone is exposed to the Garmin device via a mobile application using the Garmin SDK. i.e., if you write a mobile app to expose data on the phone, then yes.
