Enable customize watch face from watch

But I think it's not fair, and it can mislead new users or the non too techie ones.

We already got a bunch of emails asking how to customize the watch face.

It's been like this since the early days of CIQ, and there's a wiki you can point users to that explains the basics:

I think this was requested back in early 2016 when apps settings first came out.  Maybe someday.

The Garmin WFs that are native to the watch aren't written in CIQ and have "customize". The Garmin WFs that are done in CIQ are like other CIQ WFs and don't.

I believe this is not the case anymore. I've gotten a third party watch face from CIQ and there is the option to customize some of the settings from the watch (on my Fenix 6). Can someone update us on how that can be done?

Yes, there is now on device settings on devices with CIQ 3.2 or greater.  The analog sample in the latest SDK shows the basics, and there are threads here that talk about techniques.
