I did not find the list for outdoor watches (including the Fenix line), but Disc Golf is available on the following Fitness watches:

This activity profile may be found under "Outdoor".

On watches not supporting the activity natively, you can record the activity with a similar profile (for example Walking), and then change the activity type in Garmin Connect. You can also use a Connect IQ app for assigning the activity type directly.
