Seems to be kind of a waste where there can only be 2 CIQ data fields in an activity. What watch do you have as with some you can have the display go blamk after a timeout

That's up to the user.
According to your logic, all data fields should be a kind of a waste, because everyone uses something different.
For example, I do not use any other CIQ data fields for my long Ultraruns.
I have a Fenix 6 and also know the option of automatic shutdown the display (unfortunately, but it turns on again far too easily on gesture automatically when I do not want).
If you use a black background for the activity in question, you can use AppBuilder 5 with the following settings:
Label:
^ (literally blank)
Formula: ""
^ these are two straight double quotes — long press the double quote key on your phone to type a straight double quote.

The designer is a windows pc app tho.
The other advantage with that app is it’s updated for all the latest devices (for anyone else who’s interested), but mine (AppBuilder) isn’t.

With this MIP display technology, doesn't a white screen consume just as much power as a black screen?
Maybe a pure white variant is not so bad for an activity with a white background, since fewer pixels are renewed when switching to a normal data field with white background.
You as a developer may be able to estimate the actual consumption better than me.

Yeah that's a good point. AppBuilder will use whatever background color you've set for your activity, so it should work either way for you.
I guess I just assumed you wanted a black background (and in general I guess that's what people would want, especially if they were using an OLED watch.)

For your watch (which has a MIP display and not OLED), I would say yes.
I have tested it now.
A pure white datafield with your AppBuilder 5
consumes surprisingly more energy than the Garmin data field with only the time.
