Am experiencing the same issue. When i try to edit the sleep time, the time suggested was way off ie 8 hours behind the actual time or GMT time. In addition when i edited the time, the app and the watch is not in sync. The watch is still showing the old sleep time and the old sleep score while the app is showing the new sleep time and sleep score. Plus in the training readiness section both in the app and watch, the old sleep score is still displayed.
Not only are the times incorrect like everyone is commenting but when I tap on the sleep on my iPhone, I get 2 circle graphs. It used to be a circle graph and a bar graph below it where you could click on movement, res, pulse ox, etc. Not any more! I have learned that if you go to the Garmin Connect website and log on, the sleep times are correct. It is only in the App (iPhone for me) that is is offset by 8 hours. So, the watch (Fenix 8 for me) appears to be doing things correctly. The website is capturing it correctly. The rendering on the iPHONE GarminConnect App is incorrect. Hope this helps....
