Ahhhh! I misunderstood you. I thought you want to see the map in Garmin Connect.

After you choose Outdoor long press the left-middle button, then go to Ice Skating settings > Data screens > Add new ....

If I had to guess, it's partly because certain activities like Ice Skating and Basketball are more or less clones of Cardio, except with even fewer options. (Ofc the major difference is in the activity/sport type that gets saved to the FIT file and displayed in Connect).

Cardio also doesn't allow you to add a map screen out of the box, although ironically it lets you follow a course, at which point a map screen will of course be displayed. (Ice Skating doesn't support following a course).

Iow, it's just a fairly arbitrary restriction that's probably meant to simplify things. From a practical POV, they probably figure you don't need a map while you ice skate (or play basketball) because you're not really going anywhere during those activities.
