Why is it not possible to add a map screen in ice skating?
If you choose outdoor then it should enable GPS

it will only work if you have the GPS enabled. Double check in the activity settings

Ahhhh! I misunderstood you. I thought you want to see the map in Garmin Connect.
After you choose Outdoor long press the left-middle button, then go to Ice Skating settings > Data screens > Add new ....
