Yes! Same here - I have 4 cards on the watch, but now only one (the latest added) appears on the phone in Connect app.
The 3 that only on the watch randomly refuse to unlock - I try to pay, am asked for a PIN, and even though I enter a valid PIN, the screen plays shake animation and refuses it. After eg. restarting the watch it randomly works again.
I haven't found a way of nuking the wallet to be able to set it up again.
I tried deleting all files under WALLET (through Android File Transfer), but they are nondeletable. So, the watch has saved cards that Connect app doesn't know about, I can't delete them, and probbaly will not be able to add them again.
