How can i pair my forerunner 255 to a new phone without losing data ?

That should not be an issue. The data is not stored in you phone, but in the Garmin cloud, so when you log on to your account, the data will be there.

Yes. You can look at the same data from a laptop as from the phone, so it is not stored locally in the phone.
