Sometimes my watch displays "sleep mode in 30s..." With a countdown and then goes back to the watch normal display. It's very annoying when it's happening during an activity, all the workout achieved is deleted! Any idea?
Are you sure it says sleep mode and not Power Save?
It can happen when you go into training mode, select the activity, but have not actually pressed the start button to begin recording the activity.

That is why I usually lock the buttons during activities where there is a concrete danger of depressing the start button (skiing, mtb …). You even have an option of automatic button lock upon activity…

Power Save Timeout
Sets the power-save timeout length for how long your watch stays in training mode, for example, when you are waiting for a race to start. The Normal option sets the watch to enter low-power watch mode after 5 minutes of inactivity. The Extended option sets the watch to enter low-power watch mode after 25 minutes of inactivity. The extended mode can result in shorter battery life between charges.
