It is an optical HR sensor and those have technical limits. Basically speaking, they are watching your skin and trying to guess the HR with an algorithm.
It is not like a HR strap, that really gets your hearts electricity and can measure that.
I doubt, that a another optical HR device would be much different from what we see in your video.
Easy solution: Just don’t take off your watch in the middle of a sports exercise
