Every time I select 'set-up a wifi network' in Garmin Connect and select 'add network' my Vivoactive 4 switches off. So I can't add Spotify. I have already completed a data reset and it didn't resolve the issue.

Let's be honest, they don't care about that. I bought that watch as many friends has Garmin's too and heard a lot of good things about those (mainly Fenix series which I couldn't afford). And I'm very disappointed about the watch and the company...
Now my watch turns off very often during the day and I'm not even aware of that. Probably when I'm going somewhere it recognises it's as activity and then when trying to save it turns off...
Indeed don't hold your breath. I stopped using Garmin, since my watch didn't work well for almost a year now. As a solution they tried to sell me another watch, though with only one year warranty. Do they trust their own products that much?

I went to the service centre in Singapore.
They reset the watch to factory settings.
They reminded me not to use 3rd party watch face and to switched off the vibration alerts.
I have been using the watch for 2 days and so far its good and stable. It doesn't auto shut off during activity.
