Is it possible to create a new MTB activity profile on my edge explore 2 ? I only see 3 profiles, is this missing on this model ?

Indeed you cannot add your own profiles as @tmk2 states. The only things you can change are the name and the color of the profile. If you change the name of the OFF ROAD profile to for example MTB it will…
You can't. Explore 2 has three predefined profiles: road cycling, gravel biking and indoor training. You can rename it, but you can't change it's type. There is feature request for adding this ability…
This is obviously particularly ridiculous for a GPS, with one of the profiles being "indoor" and impossible to modify. Who needs an indoor GPS?
Yes, maybe. But I totally agree that existing profiles should be editable on all properties. I don't need the indoor profile and I am stuck with only 2 usable profiles. Nothing else than a marketing trick to get some selling arguments for the more expensive devices.
You can send 'ideas' to Garmin here: https://www.garmin.com/en-US/forms/ideas/
The more people post their proposals, the greater the chance that Garmin may implement them. Theoretically?
Edit:
This issue also has been reported in the Edge Explore 2 Beta Forum as a Bug Report in software version 20.18.
Enroll for the Beta Program and if you vote up, you help to increase it's weight.
The indoor one can be made to work outdoors, switch on the GPS. It will still log and indoor but that can be changed in Connect and Strava. It's an inconvenience but would be good to make ones own.
Weel, for me, it isn't an inconvenience, but a miss when you name your unit "Explore"... Anyway, I have got another much more important issue with a Marq watch, and I have been stayin away from Garmin products for a while.
It's not just an inconvenience. On "indoor cycling" mode connected lights are getting turn off. It is heavily misleading because the widget show them as turned on, you don't even know you are riding "stealth". Its not even possible to turn them on manually without disconnecting them from the device.
Well, fed up with Garmin anyway (I have another easy to solve, but impossible for Garmin, issue with a Marq watch) and I am using my phone with Ride with GPS app at the moment. And ordered a Karoo 3 to use soon…
