I find very annoying this second grey arrow on the screen, running around on the map.
I think should be implemented an option to disable it, as many users do not need to have it.

Currently there is no way to do that.
You can either set the pace data very slow or very fast. That way within a short period of starting the course the VP arrow will be off the screen.
One arrow is your position the other arrow is the position of the virtual partner (VP) based on the pacing data in the course file. The gray (grey) arrow is the VP.

This is surprising. Is there a work-around to not have this second arrow? I find it distracting. It seems like this function should be something that the user has to enable/activate, not something that is there by default.

The pace is typically set using whatever tool you used to create the course.
If the course creator tool has no option to set the pace then you can enable the VP page under Display Pages. Once the course is started you can go to the VP page and from there you can increase/decrease the pace of the VP using the bar at the top of the page.
The course was created in Trailforks and I don't see anywhere that I can adjust the pace. So per your instruction I added the VP page to my 830. I can see at the top of the screen it shows a percentage. I can adjust this up or down (the lowest being 10.0%). I assume that this means the VP will ride at 10% of the course's set pace...? No way to get it to zero?
None of this is explained in the user manual. But in the manual for the 820, it actually shows an exact speed on the VP page. This makes a heck of a lot more sense than a percentage.

Can I adjust the pace of the VP by speed on the 830? Or am I stuck with a percentage? How do I check what the actual VP pace of the course is set to?
I sure wish the 830 user manual was better written.
Also, if I go into Data Screens > Virtual Partner, I see it lists "Remove" and "Hide Screen" (with a slider switch). What is the difference if I remove vs. hide?
If you look at the course summary details on the Edge it will show the elapsed time and average speed.
You can set a speed for the VP when not following a course if the VP page is enabled. It will than add the VP position to the map and elevation page.
Hide leaves the page there under data screens, but does not shown it as a training page when using the device. Remove, removes the page so you would have to add it back in again as opposed to just unhiding it.
