I don’t see a language option within the garmin connect app through settings
I logged a ticket today and got following reply;

Same here. I contacted support and they have added me to the open case they have to this issue.
All we can do is wait :-(
I tried to switch the App language to Chinese and yes, the Edge menus changed to English.
But then I switched the app back to English and the Edge menus got back to Chinese :-(
I have a Fenix 5 too.
If you speak another language, you can set the App to that language until they fix the issue. The Edge menus will be in English and rest of the App in the other language.
My Edge 1040 got into endless reboots.. Managed to do the hard reset, reconnected everything,
But now, in my Android phone, Garmin Edge 1040 displayed in Chinese in the Garmin Connect app... Only Garmin 1040, other devices i have displayed in English
I am having the same issue. My Edge 1040 is showing up in Garmin Connect (iPhone iOS 18.3) in Chinese. My other devices, Fenix 8 and Forerunner 965, are showing up in English. The "work around" posted here in the thread to change the language for the Connect app in iOS setting does not work for me! However, I found another "workaround" that does work:
iOS settings > Language and Region > under preferred languages add a language that is *NOT* supported by the Garmin device. In my case I added Afrikaans. Order the languages so that Afrikaans is the first preferred language, English is second (this order is IMPORTANT). Dont worry, iPhone will not change to display Afrikaans menu - it will still show English and your menus and settings etc will be in English.
Next, go to Garmin Connect and sync the Edge 1040 device. When you enter the Device (for settings) in Connect, you will see the device is now showing up in English...!
If you change the order of the preferred languages or remove Afrikaans, the Edge will revert back to Chinese display...!!!
The device showing up in Connect as Chinese is not limited to the Edge. It seems to be the FIRST device in Garmin Connect. Since my devices are in order of alphabetical order: Edge 1040, Fenix 8, Forerunner 965 --> the Edge is the first device in the list and thus affected by the Chinese bug...
WTF Garmin, fix your damn bug!!! It has been two or three months now!!!
I tried this and used German - the iPhone and the edge changed to German … I’m learning German so an improvement … I’ll see if I can work around
Tried this on iPhone it worked but some Afrikaans did appear in IOS apps eg Youtube...
Tried it on Android, in OS settings, there only seems to be one way to chose global language settings...if you move Afrikaans to top in preferred slot...the GArmin Connect Edge 1040 menu is still Chinese...also the does not appear to be language option settings in Android/Settings/App/Garmin Connect
I opened a support ticket to Garmin regarding the Edge 1040 showing up as as Chinese in Garmin Connect, this is was there response:

We have released a Beta Software 26.11 to fix this issue so please follow these steps to download that Beta: Enrolling in and Learning About Garmin Beta Software Program
If you do not want to download the Beta Software, the software will be progressively rolling out as a Live version in the coming weeks.

Thank you - Id almost given up hope. I'll wait I think - I'm glad mine is just in Chinese and not suffering with the triangle of death like others are.
Android: I enrolled to Beta, downloaded 25.12, updated, synced all, English as preferred language.....Garmin Connect App 1040 menus still in Chinese!!!!
According to the previous user’s post, the beta version that corrects the issue s v26.11.
