I just checked again and indeed, the workaround does not work anymore on my phone. My 1040 is back to Chinese. Xiexie Garmin.
Yes I have the same issue it’s very disappointing, it doesn’t feel like garmin are able to solve the issue.

Ive browse through the forum and notice this happen even with the beta tester and since beta user are experience such glitch, Garmin shouldn’t push the update until it’s fully confirm the update are good to be release.
not everyone can read Chinese and I didn’t signup as a beta user so don’t treat end user as beta tester.
moreover this issue been reported for a month time till now and Garmin such a large company can’t even resolve it in a month time

I have the same problem with my Android phone. The Connect app is in English, as is my display for my Garmin Epix Gen 2. However, my 1040 is in Chinese (or Japanese?). Annoying to say the least.
Received the below reply from Garmin regarding the change to Chinese language back in 12/30/24.

Me too. Everything normal, except when I look at the 1040 device page within Garmin Connect (on iPhone). That screen (but not all of Garmin Connect app) is in Chinese. If I change the language for Garmin Connect app to something else -- say, German, everything is correctly in German. But when I change it back to English, the device screen is back in Chinese.
Did not work for me. I changed Garmin Connect app (on iOS) to German, and it was fine, in German. Changed it back to English, and the device page for the 1040 was back in Chinese. But it seems Garmin is aware of the issue, and it's not a big deal for me, as I never look at that specific page on Garmin Connect anyway... and if I do, my partner can read the Chinese for me :-)
Did anyone find a solution to this? The same thing has happened to me. Contacted Garmin yesterday and they are 'investigating'.
