How can I change the settings for the activity "expedition"?
On the other activities, I can set any setting and layout, I want. But at expedition, there is no such thing like "setting".

Are you able to long press "Up" with expedition selected? That is typically how you would get to expedition settings.
Expedition Mode is an absolutely rudimentary way of recording the GPS track during a multi-day activity. It is not a “normal” activity profile. Therefore, it is optimized to reduce battery consumption to an absolute minimum during GPS tracking.
It also disconnect sensors.

Next idea: What happens, if I interrupt the expedition mode for, lets say mountaineering mode, to get the wanted information.

That does not work. If you want to switch, you have to end Expedition. It is not possible to continue the previous recording.

The GPS is only activated for a very short time when a track point is recorded. So by default only once every 60 minutes. My assumption is that the activation time of the GPS is not guaranteed for a reliable recording of the elevation.
At least with the fenix 7 series you can have the map page displayed. If you have a map with altitude lines, you can at least estimate the altitude there at the moment a track point is recorded.
How many days are you on expedition?
Would “ultratrac” not be an option for you?
I will be on the mountain for 13 days, at least, without the possibility to recharge (I`m my own mule...).
But since you never know the weather conditions - that can stretch the days on the mountain, I would start straight away with expedition mode.
