I had no problems during a 60km mid day high sun ride this week, glancing at my wrist for quick info. The 7 may have sometimes been easier, but also sometimes not, when the screen was not directly lit by the sun. So I’m just talking about my experience with a 7 for two years and an 8 for a week, totally happy with my change so far. And that’s my experience, I won’t say what’s working for me is what everyone wants but it’s an answer for anyone asking

I'm keen to known how legible it is (and how long the battery last for) when it's mounted on the bars of the bike and using the always on display.
Has anyone tried it on a MTB? I'm worried that since I can't do any gestures or pressure I can't see the screen properly
It was on my wrist, gravel, and I’d not say it was brilliant and beautiful but I could see things like HR and the other configured details without much effort, perhaps a slight twist of the arm, same as my fenix 7 and Apple Watch Ultra before.
As for battery, I’ve just hit 0% and shutdown after six days since the first full charge. I had screen always on all week, one hour gps activity each day for bike commute to work, an indoor run session and then the 60km in the summer sun which connect says is 3:35 time wise. So my 7 solar would have lasted a bit longer but I’m happy to charge when I shower if needed. I don’t live in the mountains so power is usually available! I’d get an instinct otherwise..
on the bars? I’d say probably perfectly fine if the size is good enough for your eyes
