If you are not in the beta there is no indicator on the screen that it's on.

Believe or not it happens to me randomly during the night. Flashlight eats battery like crazy and I find it at the morning half empty. I would also love to turn double click for flashlight off.

Subsequently downloaded watchfaces from the Appstore are known to have a negative impact on the double-click speed. With these watchfaces from the store, the speed required for double-clicking is delayed (obviously due to the CPU load). As a result, 2 clicks at a greater distance are sufficient to activate the flashlight.
Use a stock build in watchface, and it won't happen anymore.

When you have the device locked, the buttons will not respond unless you press and hold a button to unlock the watch first.
