Cartography difference between standard and Sapphire versions?

For the standard version, they can be downloaded for free.

The maps are for all regions are part of your purchase price whether installed or not. you can uninstall - reinstall as much as you want.

Note that Charts (sea maps) are not included - the 3g bluechart maps are a seperate purchase for all devices including the quantix series.

Outdoor+ (satellite) maps are subscription service and only available in some countries.

You can of course also install your own maps as long as in appropriate file format.

WiFi and bluetooth on the watch is pretty slow, so best to insall maps using pc/mac via their garmin express app.
