I'm not sure what would qualify as an unnecessary point, but since there is no recording interval setting on the epix, you could try one of these:

Expedition mode is not applicable to my needs (1 point every hour)
I will try "UltraTrac" hoping that accuracy of the points is still high.
In the old gpsmap 62 you could set a minimum distance between points recording. Please Garmin it would be so simple to add a new setting with time or distance intervals ...

When you stop to take a photograph why not press Stop and pause the watch? You could also use Auto Pause too but that does not always work when hiking for various reasons. Simpler to pause the activity and resume.
Too many stops in my activity, I will sure forget to pause or resume ...
There are so many settings on this watch for even the finest detail.
Why not adding a simple Time/Distance interval ?
In "Smart" mode during a Hike, also the calculated distance of the track is far overstimated ...

Not sure what exactly you mean by that, but if you prefer having just a raw estimate of your track, test whether using UltraTrac works better for you - it takes the GPS position once a minute, hence the deviations and GPS shift during rests would be mostly eliminated.

The Expedition activity is another possibility, but the intervals are much longer (optionally between 15 and 90 minutes), hence much less details on the track.
