For most other devices, there is the option Activities, Apps and More in the device settings, and below that you find Data Fields. But for the Epix 2 is is just Activities & App.
Where can the settings for a Connect IQ app be changed then? (Aside from using Garmin Express)
Perhaps try either of the following:
Download the Connect IQ app to your smartphone - https://apps.garmin.com/en-US/
Install the Connect IQ app to your watch from Activities and Apps on the Watch or in GCM. You should then be able to find your way to the settings.
