Basically you can do it in the enegy profiles. Make a profile like this (aod off etc.) and assign it to the activity which you want to change. You can even dimm your screen to a less bright state.
It is an other thing that this method is buggy in 7.20 fw and doesn't work correctly. Maybe in 7.24 it is corrected, I don't know yet because haven't received the new fw.
Like @Gergely says you can create a separate power mode for your activities. I have created one for running and one for cycling because like you say I need AOD for running but not for cycling. It's buggy at the moment and does not work so you have to set the global activity setting to AOD - off. Hopefully, 7.24 will have fixed this. I'll try it later today and I now have the update.
Please inform us if it is repaired or not after you tested it in 7.24. for me it is still not available.
I've tried some dummy run/cycle activities and 7.24 has not fixed it.
If you change the global activities settings it works.
seting it in power modes does not override the global setting.
The problem is, you can only disable AOD in the power profile or leave it in default mode. So if my watch in wrist mode, I cannot force AOD in power profile.
Thats one thing. You could solve this with switching ON the global AOD for every activities AND assign special energy profiles to all of the activities that you are using EXCEPT for that activity which you want to have the AOD.
But as you seen it is still buggy. So even my idea would be a solution but it is not working now...

You can't change gesture mode in the power modes. I think it is a nice feature to change that there as well.
