How customizable stock faces?

How customizable are the stock faces? Can you for example change the colour of the hands and of the different fields like steps, hr and so on? And if so, can you also change the nuance of the colour?

Some are more customizable than others, it does depend on the watch face.

I'm primarily interested in if one can make the whites in a watch face grey instead. In order to get it dimmer in dark environments. Is that possible on some watch faces?

You can certainly choose less vivid colours on some watch faces but the brightness settings will achieve similar effects. Whether that is suitable for your needs is another issue.

I'm planning to combine the lowest brightness setting with less vivid colours to have the watch not glow that much in dark environments.
