Sapphire versions have double the storage and an additional GPS mode that technically should be more accurate but reviews say there's basically no difference, that may change with updates though.
Sapphire versions also come with maps pre-installed rather than having to select and wait for them to download and install.
In addition to multi-band GPS and 32 GB (vs 16GB), the sapphire version is also titanium, so 70 grams for the sapphire vs 76 grams for the non-sapphire version.
I will say that the sapphire version feels much lighter than my Fenix 6 Pro solar. It's very noticeable.
I have the Steel version and part of me is wondering if I should have bought the sapphire one. I got the steel one as I had black ones for years. The only thing I don’t like is the grey sides. If they had been black I don’t think I would be second guessing.

There is no difference in the 2 points you are asking about.
But you will miss dual band GPS on the standard and you will only have 16GB internal storage so you won't be able to install complete Europe map for example.
