Bezel is used as GPS antenna:

Garmin could switch to an internal antenna like it does in Forerunner series but that would likely require a redesign.
I think fully plastic watches would reduce the premium feel. Paying $1000 for almost entirely plastic watches doesn’t sit right with me—I’d prefer a titanium bezel and titanium case back.…

Agreed. The titanium has a cool factor for sure but many prefer lighter weight. The polymer is the same used in Glocks which obviously are very durable
I'd be curious how much it would bring down the cost and how much it would save in weight. If we're talking about anything less than a weight reduction 5 grams I probably wouldn't notice the difference. I imagine it would take more than a 10% weight reduction to notice it.

IMHO weight is not that important, but would be nice to get flatter watch. Thin metal case could actually help.

I'd prefer plastic and not paying $1k! Or really, bringing the basic balance of features, MIP, and solar back to Forerunner series...
