Seconds and Heartbeat Freezing

It sounds like it's just the default battery-saving display behaviour, where if the watch isn't moved it reverts to a lower (i.e. less than 1 sec) refresh rate, so it removes objects such as the seconds that would no longer be updating. As you say, turning the watch to look at it should reactivate them.
