Title says it all, really.
Why is UTC missing from the list of available timezones for the display?
Can we add it somehow?
UTC is THE timezone. Everything else is just pretending.

UTC is THE timezone. Everything else is just pretending.
UTC never has DST or anything like it.
UTC isn't a time zone, it's the time standard. Every time zone is defined as its relationship to UTC.
So Eastern Standard Time is UTC-4. Eastern Daylight is UTC-5. Internally, every garmin device uses UTC to know what time it is. the GPS satellites all transmit the timestamp in their data packets The display is then modified by whatever the Timezone it is that's set.
I just want the unit to display the time, Not modified in any way by any thing for any reason.
This is a matter of terminology. There IS a time zone with offset 0. This is the one which is selected when you choose either "Europe - Western" or "Iceland". When you set the device to this (one of these) time zone(s), the time displayed will be offset 0, which (I believe) is what you want.
The device knows only about time zones. It knows nothing about the abstract concept of UTC.
You can see the effects. First, get a good fix (so that the unit has an accurate idea of the current time from the GPS constellation. We don't want to be experimenting with stale time data.). Next, change the time zone to anything other than the local time zone. Observe the time displayed in the status bar, which now shows time in the selected time zone.
When you set the time zone as Leslie instructed, the time displayed in the status bar will be UTC.
For example, I am in US Central, which is currently on standard time. This is UTC-6. The current local time is 08:33:xx. If I set the device to "Europe - Western" (or "Iceland"), the displayed time changes to 14:33:xx, which UTC.
Europe - Western uses DST so you would need to set the Daylight Savings Time setting on the GPSMAP to Off in order to have the displayed time always match UTC regardless of DST being in effect.
Alternatively you can use Iceland as the time zone and leave the DST setting to default Off as Iceland does not have DST.
Western European Time timezone naming is strange. It includes UK, Ireland, Portugal, Iceland and a couple of islands. Most countries we consider western Europe are actually in Central European Time (or Central European Summer Time when DST applies). See https://en.m.wikipedia.org/wiki/Western_European_Time for the details.
