I just got the Approach S70, Z30 and CT10 sensors. The S70 and Z30 are paired, as are the CT10 sensors. When I play a round, do I still need to have my phone nearby?

No you don't. Data is uploaded after the round.

A Bluetooth connection between the Approach S70, smartphone, and the Garmin Golf app running in the background is only needed if you would like the following features while golfing:
All other golf features on the watch work through the sensors and preloaded mapping installed on the watch.
