If you go Garmin Connect web , profile and account on your thumbnail / Account settings/ User Settings you can manually update it

same for me. I changed the values in Garmin Connect Web - it was not reflected in the watch or app after syncing.
It worked for me. I have no idea of the method used by Garmin to estimate my VO2 Max but I bet it was based on my max heartrate, which Garmin thought was 207. So it gave me a VO2 Max of 50 which would be nice ... but I am 67 years old and probably inaccurate. So I reset my max heartrate to 180 (estimated) and was able to change my V02 Max on Garmin Connect to 30. As I ride I know Garmin will recalculate it.

Wouldn't be simpler to try to understand how the device works, why it shows a low VO₂max, and a high Fitness Age, and learn how to use it correctly to have more accurate data?
